Despite being perfectly fitting for Thanksgiving, this seasonal Pecan Pie Porridge is a firm Autumn/Winter all rounder for me. Delicious, easy and of course with the lingering mapley sweetness.
What you’ll need:
+ 1 cup porridge oats
+ 2 tbsp flaxseeds
+ 1 cup coconut milk (+ 1 cup water)
+1.2 cup chopped pecan nuts
+ 2 tbsp maple syrup
+ 1 tbsp cinnamon
+ 2 star anise
Place your pecans in a frying pan and drizzle over the maple syrup, pop the heat on and let the pecans caramelise in the maple for 3-4 minutes – stirring your mix frequently to avoid burning. One the maple pecans are covered, they’ll be sticky and warm from the heat.
Leave to cool whilst making your oats. Pop your oats in a saucepan and stir in 2 tablespoons of flaxseed – because every great porridge bowl should contain flax! Then pour in the coconut milk, water, cinnamon and star anise and stir continually whilst in a medium heat. Add more water or coconut milk if your mixture needs it, or if you like your porridge extra runny.
Pour into a bowl (attempt to remove your star anise pieces first) and top with your caramelised maple pecans and enjoy!
