Oatmeal + Raisin Cookies – Gluten Free Repeat after me… I am glorious, I am glorious, I am glorious.
Wise words from some tasty cookies!
After a recent trip to Canada I was inspired by an abundance of delicious looking cookies… many of which I couldn’t try thanks to the lack of gluten-free options – so much so, I decided to spend a jet-lagged morning making these delicious circles of joy. The best bit is – you really wouldn’t know that they’re gluten-free, as well as being vegan too (if you opt for the maple syrup to sweeten of course!)
What you’ll need:
+ 1 cup almonds – ground
+ 1 cups oats – ground
+ 1 cup oats – not ground
+ 1/3 cup of ground flaxseed
+ 1 tsp baking powder
+ 1 cup jumbo raisins
+ Pinch of salt
+ 1/3 cup honey (or maple syrup)
+ 1/3 cup rapeseed oil
+ Sprinkle with glorious vibes
How to make
Preheat your oven to 200 degrees.
Start by grinding your almonds and oats (if not already ground) into a fine ground consistency. Then add to a food processor along with the flaxseed, baking powder and salt, pulsing until everything is mixed.
Then spoon in the honey and add the oil, pulse again until everything is mixed thoroughly.
Your mixture at this point should be quite gooey. Lastly, add the (unground) cup of oats and jumbo raisins – this will add a great contrast in consistency. Mix until well incorporated.
Spoon the cookie dough onto a greaseproof tray – for large cookies I used 1.5 tbsp of mixture. Place in the oven for 10 minutes. Wait until cooled before tucking in!
Makes 12 – 14 cookies
