RECIPE: Christmas Banana Bread

A festive twist on the traditional, why not bake this Christmas Banana Bread throughout December, as a healthy alternative to snack on. A great way to use up over ripe bananas, load up on seasonal spices and bake yourself happy!

What you’ll need:
+ 1/4 cup rapeseed oil
+ 1/4 cup rice or oat mylk
+ 6 tablespoons of maple syrup (or honey can be used)
+ 1/2 tsp baking powder
+ 1/2 tsp bicarbonate soda
+ 3-4 ripe bananas
+ 1 tbsp Christmas Spice (I use Steenbergs Pumpkin Pie spice)
+ 1 cup of oats + 1 cup of buckwheat flour
+ 1 cup of chopped walnuts
+ Pinch of celtic salt

To Make:
Pre-heat oven to 190 degrees.

Mash or blend your bananas and add to your oil, maple syrup, rice mylk and whisk (or blend in a food processor).
In a separate bowl mix your dry ingredients; flours, powders, walnuts spices and salt and mix throughly until well incorporated.

Then fold your dry mixture into your wet, mixing slowly and carefully until everything is combined.

Line a loaf tray and transfer the mixture into the tin, before placing it in the oven for 25-30 minutes.

Leave to cool on a wire rack and wait to cool until slicing.
We enjoyed ours with a pot of Ayurveda Pure spicy and sweet herbal jam.
